Ingredients
Salad
  • 3 cups romaine
  • 1 15 oz can garbanzo beans or chickpeas rinsed and drained
  • 1 6-1/2 oz jar marinated artichoke hearts, drained and chopped
  • 1 medium green pepper, chopped
  • 2 medium tomatoes, chopped
  • 1 2-1/4 oz can sliced ripe olives, drained
  • 5 slices deli ham, chopped
  • 5 slices thinhard salami, chopped
  • 5 slices pepperoni, chopped
  • 1/2 small block Monterery Jack cheese, chopped
  • 2 medium green onions, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 small Pepperoncini optional
Servings:
Instructions
  1. In a large bowl combine the first 11 ingredients.
  2. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper.
  3. Pour over salad; toss to coat.
  4. Sprinkle with cheese.
  5. Top with pepperoncini, if desired.
