Italian Chopped Salad
  • 3cups romaine
  • 115 oz can garbanzo beans or chickpeas rinsed and drained
  • 16-1/2 oz jar marinated artichoke hearts, drained and chopped
  • 1medium green pepper, chopped
  • 2medium tomatoes, chopped
  • 12-1/4 oz can sliced ripe olives, drained
  • 5slices deli ham, chopped
  • 5slices thinhard salami, chopped
  • 5slices pepperoni, chopped
  • 1/2small block Monterery Jack cheese, chopped
  • 2medium green onions, chopped
  • 1/4cup olive oil
  • 2tablespoons red wine vinegar
  • 1/4teaspoon salt
  • 1/8teaspoon pepper
  • 2tablespoons grated Parmesan cheese
  • 1 small Pepperoncinioptional
  1. In a large bowl combine the first 11 ingredients.
  2. For dressing, in a small bowl, whisk the oil, vinegar, salt and pepper.
  3. Pour over salad; toss to coat.
  4. Sprinkle with cheese.
  5. Top with pepperoncini, if desired.
