Low Carb Banana Bread
  • 2medium ripened bananas(the riper the more flavour), mashed with fork
  • 3large eggs
  • 2Tbs oil(can substitute unsweetened applesauce)
  • 1/4cup water(approximate)
  • 1tsp vanilla extract
  • 1cup stevia in the raw
  • 2cups almond meal/flour
  • 1Tbs baking powder
  • 1/2tsp salt
  • 1/2cup chopped walnuts
  1. Pre heat oven to 350°F.
  2. Grease loaf pan with unsalted butter.
  3. In a two cup or larger measuring cup add mashed banana, eggs, vanilla extract, and oil should measure a little over a cup and add water to the two cup mark. (using this method is recommended to get correct water amount, though I would say about 1/4 cup)
  4. Next, in a medium bowl, combine Almond flour, Stevia, Baking powder, Salt, and chopped walnuts.
  5. Pour wet ingredients over dry and mix with mixer until well blended.
  6. Pour into loaf pan and bake for 45 minutes.
  7. Let cool fully before removing from pan and slicing.
